Proof, An American Canteen, will host a WhistlePig Rye Whiskey Weekend on Feb. 16-17 with special menu items highlighting the rich flavors of WhistlePig, a Vermont-based premier rye whiskey company, as well as a line-up of specialty cocktails including the Rye Old Fashioned created tableside with farmstock rye, honey-fermented blueberries, house bitters and honeycomb. the Straight Rye Whiskey Sour with dark chocolate fat-washed WhistlePig 10 year rye, Arizona citrus, muscavado simple syrup and a red wine float, and the Apricot Manhattan with apricot-infused WhistlePig 12 year rye, Antica vermouth, and angostura bitters.
The three-course WhistlePig menu is priced at $55 per person. The specialty menu items also may be enjoyed a la carte.
- Complimentary welcome snack: WhistlePig maple syrup, roasted nuts and Proof candied bacon.
- First course: “foieffle,” an orange waffle with shaved foie gras terrine, brandy cherries and WhistlePig maple syrup.
- Main course: 10 year whiskey-washed pork osso bucco, winter mushrooms and preserved stone fruit.
- Dessert: A choice of a 12-year rye WhistlePig pecan pie served with 12 year cask-finished whiskey ice cream or an “adult” milkshake featuring the whiskey ice cream with candied bacon.
Proof also will feature a WhistlePig Primal Cut Dinner during the weekend. The primal cut is an 8-pound Wagu beef shank, which is prepared over three days with WhistlePig’s premium 14-year “Boss Hog” rye whiskey. Served family-style for up to four people, it is accompanied by a barrel strength rye demi, potato gratin, and seasonal vegetables. The WhistlePig Primal Cut Dinner is priced at $185.
