Disneyland Grilled Cheese
This recipe recently popped up on my YouTube feed, and its ooey-gooey cheesy goodness was too enticing not to try. The Disney team shared it to celebrate National Grilled Cheese Day on April 12, and it’s now going into my regular repertoire. At Woody’s Lunch Box at Disney’s Hollywood Studios, it’s served on sourdough, although I used artisan white bread.
What makes this sandwich so uniquely popular? Provolone and cheddar encase a bonus layer of cheddar cream cheese filling, and the bread is toasted with a coat of garlicky mayo instead of butter.
Excuse the pictures - I didn’t plan on posting but wanted to make sure I don’t forget this one! I’ll post clearer pictures as I continue to make this, next time with a big bowl of tomato soup to cut the richness.

Some tips:
Measurements aren’t given for the amount of mayo or cream cheese filling to spread, and I’ve seen people slather on thick layers. I recommend a nice, thin, even layer of the mayo, just enough to coat the bread, and about a quarter-inch thick layer of cream cheese. Too much and the sandwich will be messy and goopy.
Next time I’ll wait for the sandwich to cool about 3-4 minutes before cutting so the cheese doesn’t ooze out as in the photo.
Be sure to mince the garlic well; you don’t want big chunks. I minced mine with a little salt into a paste.
