PHOENIX (Jan. 30, 2023) – Kimpton Hotel Palomar Phoenix today announced the official opening of Eden, the lush new rooftop lounge experience located on its third floor. Owned and developed by DiamondRock Hospitality Company, Eden brings a revitalized energy to the core of Downtown Phoenix, blending an innovative beverage menu and thoughtful culinary indulgences with an energized setting to gather, celebrate and enjoy.

The heart and soul of the experience, Eden’s beverage program is led by revered mixologist and Lead Bartender Clint Spotleson. Passionate about thoughtful cocktail culture, Spotleson has curated a diverse beverage menu designed to captivate and execute guests’ palates that showcases a variety of spirits, house-made syrups and garnishes. Desert Sunset: Arizona Distilling Co. Commerce Gin, Gran Ponche Pomegranate, pistachio orgeat, lemon and magic foam
Eastern Medicine: Turmeric-infused Ten to One unaged rum, Gifford Banane du Brasil, coconut, pineapple and acid-adjusted orange
From Oaxaca With Love: Naran Espadin mezcal, El Tesoro reposado tequila, passoa, agave, chipotle cacao and orange bitters
Garden of Eden: Serrano and cilantro-infused Patron Silver, lime, Italicus, agave and edible paint
Phoenix Rising: Hibiscus and orange-infused Tito’s vodka, lemon, pomegranate green tea syrup and La Poema sparkling rose
In addition to its individual cocktail menu, Eden features large format selections including The Commission, a blend of Blade & Bow bourbon, demerara, angostura and orange bitters and cherries served tableside in a decanter and the Summer of Love, prepared with Pisco Porton, Giffard Pamplemousse, lime, lavender and Louis Jadot Rosé. Zero-ABV options include the Doctor’s Note, a blend of Seedlip Spice, coconut, pineapple, orange and cinnamon and the Club Monaco, prepared with Lyre’s Italian Orange, rosemary and club soda. Eden’s beer menu showcases a selection of local favorites on draft including the Four Peaks Wow Wheat, the Helton Valley Venom Pilsner and The Shop Church Music Juicy IPA in addition to a collection of classics while its wine selections include reds, white, rosés, oranges and bubbles.
Kimpton Hotel Palomar Phoenix’s celebrated Executive Chef Alexander Robinson drives the culinary experience at Eden, with traditional Mediterranean flavors fused with elements of coastal cuisine as the focal point of the menu. To share, guest can enjoy items like the Seared Pacific Yellowfin Tuna with cucumber harissa, sweet pepper, country olive and crispy chickpea; the Aleppo-roasted Butternut Squash, accompanied by Dukkah spice, saffron yogurt honey and cilantro and the Avocado Labneh, infused with lime zest, espelette pepper and cilantro. Notable entrees and large plates include the Westholme Wagyu Strip Steak Kabobs with shawarma spice, quinoa tabbouleh, saffron labneh and pita; Roasted Lamb Meatballs topped with green tomatillo harissa sauce and the Winter Squash Flatbread, topped with roasted squash, Crow’s Dairy goat cheese, candied pecan, caramelized cipollini onion and hot honey. For a touch of sweetness, guests can enjoy Prickly Pear Baklava with cactus jam, agave and pecan and the Mishmish Rice Pudding with orange, pistachio and chocolate peel.
Envisioned and executed by Wilson Ishihara, a California-based leader in hotel and restaurant design, the 5,000-square-foot, 153-seat Eden is a socially vibrant oasis that celebrates its place in Arizona’s vibrant desert landscape through color, texture, patterns and plantings. Fresh, grounding neutrals punctuated by pinks, teals and other hot colors serving as a nod to the desert cactus flower adorn the space while eye-catching patterns inspired by celebrated architect Frank Lloyd Wright’s ability to translate natural forms from Arizona’s landscape can be found throughout. Geometric highlights including a terrazzo concrete bar and table tops with whimsical triangular tile imported from Italy serve as eye-catching design moments that work harmoniously with Eden’s color palette to create moments of wonder. Specially crafted furniture pieces including built-in sofa banquettes, booths and communal and accent tables were brought to life by local custom furniture manufacturer Sólido and offer inviting yet intimate spaces for guests to gather. Native plants like yucca serve as a nod to the juxtaposition of indoor and outdoor while a woven light fixture from Spain adds texture and warmth to the space.
