Chef Sacha Levine Blends Fresh and Flavorful at Singh Meadows
(Press Release) Savor fresh flavors every Friday through Sunday with from-scratch breakfast and lunch dishes carefully crafted by Chef Sacha Levine at Singh Meadows in Tempe. Chef Levine has previously worked at Ocotillo, FnB and Rancho Pinot, and brings her vast experience with farm-to-table entrees to the plates at Singh Meadows. Assisting in the kitchen are Carlos Carbajal and Kevin Dragos.
"I have been a huge proponent of local, seasonal, and vegetable-driven food for the bulk of my career," said Levine. "Preservation has always been a staple for me. We keep the larder stocked with pickles, sauces, and ferments that are sold in the market as well as used in the kitchen."
And although Singh Meadows is a vast, sprawling area, the menu and the kitchen are harmonious with the seasons. The menu is driven by the market and the revolving produce each week, and many items rely on Arizona's bounty. The menu offers a variety of tasty dishes, with vegetarian, vegan and gluten free options that ensure there is something for everyone, all for $12 or less. Taste of the Meadows ($9) combines grilled Noble Bread, ricotta, honeycomb, dates, pistachios and fresh fruit. The Kimichi Fried Rice ($10) includes smoked pork belly, roasted cauliflower, sunny duck egg and scallions. The Huevos Rancheros ($11) are made with a cheese quesadilla, charro beans, fried eggs, and salsa rojo. For salad lovers, the Grilled Sweet Potato & Winter Green Caesar Salad ($10) is topped with a hard cooked egg, garlic crumbs and chili flake. Or savor the tastes of the Meadows Picnic Basket ($12), which includes falafel, hummus, falfoush salad, feta, pickles and Swiss chard. There are also two different taco options on the menu: Indian Breakfast Tacos ($9) and Jerk Turkey Tacos ($11).
"Cooking at Singh Meadows is a sort of coming home for me," added Levine. "Working at the farm as a young cook helped to define me in the kitchen today. I am close to the source of what I get most excited about in the kitchen - beautiful, local produce."
Singh Meadows Café also offers a number of fresh pressed/squeezed juices, including Blood Orange, Tangerine, Kale, Beet, and Apple, along with a selection of teas, golden milk and coffee.
